Salted Caramel Pecan Popcorn Recipe


I have a love affair going on between sweet and salty snacks, some nights I just can't decide - and I admit it's been going on for some time..

If you are at all like me this recipe will help that pesky conscience of yours so you don't feel like you are cheating on either of your loves.  Enjoy!

Ingredients:

  • 3/4 cup of butter
  • 2 cups of brown sugar 
  • 1/2 cup of corn syrup (light or golden does not matter)
  • 1 tablespoon of salt 
  • 1/2 tsp baking soda
  • 1  1/4 tsp vanilla extract
  • 1 cup of pecans (optional)
  • 2 big mixing bowls of popcorn ( I just make 2 batches) if you want it to be reallllly gooey and coated make only one super big bowl. 
Directions:
  1. preheat oven to 250 degrees Celsius
  2. in a medium pot over medium heat melt together your butter, brown sugar, salt & Corn syrup - make sure to stir constantly.. 
  3. Bring mixture just to a boil then let it cook for 4 minutes uncovered WITHOUT stirring
  4. When your timer beeps take off the burner and add in your baking soda and vanilla and give it a good stir
  5. If you are using pecans stir them up in your popcorn now so they get coated with sauce
  6. Pour slowly over your popcorn - mixing well to coat as much of it as possible 
  7. spread out the popcorn into 2   9x13 baking dishes sprinkle with some more salt from your shaker 
  8. Bake for one hour - Stirring up every 15 minutes 
  9. The trick to getting the baked in salty taste is to salt it each time you stir it..
I never said this recipe was healthy but it's damn good!
